The Underrated Pancit Maciang from San Pedro

Just like anything else in the market the ever loyal pancit has seen a lot of variantions when it comes to flavor and style. Of all the pancit dishes and variants that are out there, there is only one that sticks close to my heart as well as my gut and that would be the "Pancit Maciang" from my hometown of San Pedro, Laguna.


Located in the heart of San Pedro, the Maciang is cheap and tastes great. 


The Pancit Maciang consists of several parts, you've got the well cooked bihon noodles together with carrots the fried egg (which should always be sunny side up). This pancit will not be complete with the chicken gizzard/ liver or "proben" together with lots and lots of Ketchup [as in really copious amounts of banana ketchup]

"What about the taste?" you might ask well, its really not different from the traditional pancit. So expect very minimum amount of salt from this one. What raises the stakes in terms of health conscious buffs will be the deep fried egg [side up] together with the liver.

While an order of this fancy looking pancit will be filling in itself, you can bet your a$$ that it's going to be a lot better when you chow down with toasted buns. These buns are readily available just ask the local 'tindera' to add that to your tab. 

Of course to complete the whole rendevous with this hidden gastronomic delight from the South, you can also order hot choco/ 3-in-1 coffee or softdrinks...

The perfect combo for a filling lunch or dinner under 100 pesos when you're in San Pedro.
Finally the price is pretty impressive. The plain order is Php 20 while the special is Php 30. Regular order is Php 25 which will contain only the chicken liver. And if you're picky about the chicken liver or innards you can order the Pancit Maciang with Egg [itlog ang laman] for Php 25.00

The Pancit Maciang isn't just a really creative variation of the classic pancit. It's actually a statement for San Pedro in general. It tells people that "hey, San Pedro ain't going to go down as a municipality that ain't got special or unique dishes. We got our own."
